I'm very new to the game so much so that I'm only on my second bag of fresh roasted beans.
My technique was all over the place with the first bag so the second is the first where I've been able to get scientific. Consistent weight, tamping pressure, water temperature, etc.
The problem is that EVERY shot from this bag has been sour. Granted the roast date on this bag was 3 weeks past compared to 4 DAYS past with my last bag.
I know the first culprit is under or over extraction and there have definitely been times when my flow rate is way too fast/slow. but even when I have a perfect LOOKING stream it seems like it goes from dark brown to blonde way too fast.
